If you don’t know already, lazy weekend brunches are one of my favourite meals to make. In fact some weeks it’s probably one of the only meals I make. I’m very lucky to have a partner who loves to cook. However at the weekend, he lies in and I get to make a mess in the kitchen throwing things together to create a tasty brunch!
I had some Dr Zak High Protein Bagels* to use so was trying to come up with an interesting topping other than my usual Almond Butter! These high protein bagels are perfect for brunch because they are so filling – there’s actually 24g of protein in each bagel! Plus they have the benefit of containing 40% less carbohydrates than other brands and the sugar content isn’t too bad compared to others I’ve seen.
My boyfriend is a huge fan of scrambled egg and although I enjoy it I do find it a little boring some days so I decided to jazz it up a little last weekend. I was inspired by the rich flavours and colours of the Mexican dish Huevos Rancheros.
I grabbed some tomatoes, peppers, red onions, chillies and garlic and chopped them all up. I threw said ingredients into a frying pan and started to cook them slowly. I then whipped up some eggs and added them to the pan. Once in the pan I continued to stir the mixture around until I was happy with the consistency of the eggs. The mixture cooks really quickly so be sure to not overcook it an end up with rubbery eggs!
I poured the egg mixture on top of toasted bagels and added some homemade salsa. The homemade salsa adds a freshness to the dish and is one that Matt had made earlier. It’s super simple and a million times tastier than shop bought salsas. Just throw tomatoes, red onion, coriander, chilli and a little lime juicer into a mixer ( I use my Nutribullet) and blitz for a few seconds.
Et voila! My Huevos Rancheros inspired eggs on toasted bagels – a super tasty and nutritious brunch!
