Gooey, crumbly, tasty and healthy cookie bites – what could be better?
By following so many wonderful fitness and health bloggers and instagrammers I constantly have a list of healthy treats that I want to make and these healthy chocolate chip cookies were one of them. Now usually healthy recipes have (what seems like) a hundred different ingredients in them, which can make them quite pricey to make. So the fact that this recipe only has 6 ingredients definitely appealed to me!
All you need is; 1 1/4 cups of canned chickpeas, 1/2 cup of natural peanut butter, 1/4 cup of honey, 1 teaspoon baking powder, 2 teaspoons vanilla extract and 1/2 cup of chocolate chips.
Firstly make sure your chickpeas are well rinsed and dry – you don’t want them be moist so pat them dry with a kitchen towel. Preheat your oven to 175 degrees C.
Simply throw all your ingredients (excluding the chocolate chips) into a blender and mix them until the mixture is very smooth.
Throw in your chocolate chips and mix. Your mixture will be very thick and sticky – so not to worry.
Next line your baking tray with baking parchment and roll little balls and place them onto your tray. I flattened mine slightly to ensure they cook though.
Bake in your oven for 10 minute until the balls are lightly browned on the outside. They will still be soft when you take them out of the oven so try not to overcook them.

No idea sorry. Can’t imagine they are very low caloried but they won’t be the worst!
