Healthy sweet treats are very hard to come by. When you do find a recipe, it usually has strange and exotic ingredients that either can only be found at specialist shops or cost you the earth. However this recipe that I found on Chocolate Covered Katie (go check it out) is different, there aren’t too many ingredients and the ingredients are probably already in your cupboard.
These Healthy Choc Chip Chickpea Blondies are extremely easy to make, very yummy and obviously a little healthier than traditional blondie recipes. I say a little healthier, because they are still only a treat; you shouldn’t be eating these everyday just because they are “healthy”. These healthy choc chip blondies are a great sweet treat that you can enjoy and still stay on track with your health and fitness.
These blondies are fudgey plus they contain no eggs and no flour!
To make these healthy choc chip chickpeas blondies you will need;
1 can, drained and rinsed chickpeas
3/4 tsp baking powder
1/8 tsp bicarbonate soda
1/4 tsp salt
3/4 cup brown sugar
2 tsp vanilla extract
1/4 cup of oats (porridge oats)
1/4 cup natural peanut butter (no added sugar)
1/2 cup dark chocolate chips
These blondies are soooo easy to make. All you have to do is blitz the chickpeas in a food processor until smooth (needs to be a food processor to ensure that everything is broken down and as smooth as possible). After you have smooth, broken down chickpeas, add in all the other ingredients (except the choc chips) and blitz again.
Make sure your mixture is as smooth as possible. Next mix in your choc chips, and scoop your mixture into a greased cake tin/ oven-proof dish. Place in a preheated oven at 180 degree c and bake for around 25-30 minutes. They will look a little undercooked when you get them out, but they soon firm up when they cool.
You are left with a plate full of guilt-free fudgy, chocolately blondies! Yum!

This sounds so good! For some reason when I saw this on twitter I read it as a soup and I was so confused and thought maybe “choc” stood for something other than chocolate LOL. Now that I see the post it makes much more sense 🙂

I have half a bag of chickpeas and didn’t know what to do with them – now I know!! I’ll be trying it out 🙂 Hopefully it works just as well without the peanut butter?? (I have an allergy).
