If you don’t know by now, I am a huge pizza fan! However pizza isn’t the healthiest of meals so I am forever trying to find ways to make my favourite indulgence a little less fat and calorie laden. I have previously shared my Tortilla Pizza Recipe which I eat regularly and have received great feedback from you lot on. So today I am going to share with you my latest discovery; two ingredient pizza base. Yes you heard me right a pizza base made solely from two ingredients. These two ingredients are Greek Yoghurt and flour!
I used my favourite Fage Total Greek Yoghurt with strong white flour and it makes the perfect doughy and crispy base that is as good as your traditional Italian crust pizzas! Simply mix 1 – 1 1/2 cups of strong white four with 1 cup of Greek Yoghurt. Get your hands in the bowl and mix together the two ingrediants to form a smooth, soft, non-sticky dough. You may or may not need to add a touch more flour.
Once you have a good dough, roll it out into a pizza shape and top with your choice of toppings. Place the base on a pizza stone or oven tray and bake in a preheated oven for around 15-20 minutes. Keep an eye on it as the time you need to leave it will depend on your choice of pizza stone or oven.
I decided to top mine with toppings that reflected a refreshing Greek Salad. This made it very summery and full of vegetables and nutrients, rather than being topped with calorie laden peperoni. I used passata as my tomato sauce and swapped mozzarella for Haloumi cheese and topped it with red onion, cherry tomatoes and olives and threw some chopped cucumber on top once it had baked in the oven. The mixture of hot and cold toppings makes the pizza very refreshing… perfect for these hot days!
